Pan Roasted Chicken Lemon Garlic Green Beans:
Baked Southwest Egg Rolls:
No-Bake Dessert Balls: (see recipe below)

No-Bake Dessert Balls
1 cup oatmeal
⅔ cup toasted coconut flakes
½ cup peanut butter
⅓ cup honey
¼ cup cocoa powder
1 teaspoon vanilla
½ cup chocolate chips

Stir all the ingredients together and put into the fridge to rest for 30 minutes.
Roll into balls and chill for at least an hour.

Tonight chat got to make fun of me… a lot. Why? I admitted I wanted to remake this recipe I have had for awhile now because I have never used real lemons before. I always have a bottle of lemon juice in the fridge, so when a recipe calls for lemon slices, I squeeze some juice on them. Nothing is wrong with this!! Very handy! But… tonight I wanted to try it and it was very nice to bite into a roasted lemon slice!

These egg rolls are a dish I have made many many times. I love that they are baked, so no frying needed, and these are wonderful hand-held meals for when you are on the go!

*cough* Why am I only holding one? Because I might have been into eating them too much when I realized I needed a picture… whoops! These were great little treats at night, eating only about two balls and getting enough to satisfy the sweet tooth.

Meal Prep: Everything in the sheet pan! So I had some chicken, green beans, and potatoes.
